Last Day of May...



Had a day off and spent it rollerblading, swimming and eating amazing food. There was a memorial day paddle out at Steel Pier where I snapped a pic of this pretty gal. She asked me to facebook her the pic, but I cannot find her! She goes by Trinity. And despite advice from friends, I took the Canon A85 in the Chesapeake bay to capture this sunset. Such a beautiful start to summer 2010.

I have been sucked into a world of work/school/work/school/work...and this is just one class! Anyway, the semester ends soon...and I will be back in the swing...but I sure will miss all the juicy, take-out food goodies that I have justified for the past two months. :)Still trying to hold onto that "eat clean" edge...

SNOW DAY!



Digigidget in the kitch today...after an a.m. walk through the snowy streets of Norfolk, VA, I decided to break the clean eating rules and make a batch of "famous" Mumie pancakes. This recipe comes from my Dad, the best pancake maker ever. If I had to guess, He is probably making a blueberry batch in NJ, for him and my mom! Keeping with Eat Clean principles, I also cooked some lean protein to go with my starchy carb stack-o-pancakes...some red cabbage and apples too! For the record, I am most of the way through three weeks of eating clean. Toughest part is being on the go and making sure to take the time to cook the right food and have the right food in the house. Total pound lost=4...however, I have been slipping a bit lately indulging in hershey kisses, bacon and beer. So for the BEST pancakes in the world, get your syrup warm and your butter whipped and keep this recipe in the kitch!

Mumie Pancakes

2 cups flour, 2 cups milk, 1 egg, 3tsps baking powder, 1-2Tbs sugar, 2Tbs oil....mix and go! Changing up flour and adding fruit has always been tasty too. xoxo Jill

eating clean...


Three days into the "eat clean" diet. My mom called me recently to say her and my father were looking into weight watchers. I know it is hard to change habits and commit to a plan, so out of solidarity and support, I will blog about healthy recipes and habits I will be embracing here in VA. Tosca Reno and her "Eat Clean" books i am sure I will consult. One thing about my kitchen, is that I have three shelves full of cookbooks. Some vintage, some ethnic, some classic, but mostly vegetarian. I found a great, easy and economically friendly recipe in the "Women's Exchange of Brooklyn Cookbook", 1982. Lentil Soup. Eat clean prescribes eating lean protein (lentils) with complex carbs (whole grains) 5-6 times a day. Minimal fats, sugars and other cloggy stuff of course. So, this recipe may seem a little bland, but I like it! Jazz it up with some crushed red pepper flakes too! For the macaroni, I used whole wheat version. ahhh....lentils.

Lentil Soup: 1 cup lentils, 1/2 cup macaroni, 1/4 cup mint, 1 large onion, sliced, 2 quarts water, 1/2 teaspoon cumin, salt, pepper...

Wash lentils. And all ingredients except mint to a pot. Boil for about 20 minutes. Add mint, boil an additional 5 minutes. Serve hot.

Here's the scoop...a year to become more versed in digital darkroom and this journal to record the process. I love cameras. I love photography. I have goals of being a working photographer someday.
