SNOW DAY!



Digigidget in the kitch today...after an a.m. walk through the snowy streets of Norfolk, VA, I decided to break the clean eating rules and make a batch of "famous" Mumie pancakes. This recipe comes from my Dad, the best pancake maker ever. If I had to guess, He is probably making a blueberry batch in NJ, for him and my mom! Keeping with Eat Clean principles, I also cooked some lean protein to go with my starchy carb stack-o-pancakes...some red cabbage and apples too! For the record, I am most of the way through three weeks of eating clean. Toughest part is being on the go and making sure to take the time to cook the right food and have the right food in the house. Total pound lost=4...however, I have been slipping a bit lately indulging in hershey kisses, bacon and beer. So for the BEST pancakes in the world, get your syrup warm and your butter whipped and keep this recipe in the kitch!

Mumie Pancakes

2 cups flour, 2 cups milk, 1 egg, 3tsps baking powder, 1-2Tbs sugar, 2Tbs oil....mix and go! Changing up flour and adding fruit has always been tasty too. xoxo Jill
